Aligned with the concept of "Buen Vivir" (Good Living), today we are part of the Slow Food community, an international network promoting healthy, clean, and ethically sourced food. We also aim to become a "kilometer-zero” diner, meaning that all our ingredients are produced within a radius of no more than 100 km, following sustainable practices, free from genetically modified organisms. We offer our clients local and seasonal products, promoting a circular economy in balance with nature.

At La Colecturía, the visual and auditory landscape changes as the day passes, and so do the experiences. The Bar Fogatero is a space that generates multiple sensations. Music and mixology become vehicles to enjoy Continuum: a digital artwork that we project onto our majestic three-century-old walls.
